Caramelized onion chutney is an alternative to pickled Onions. If you don't want to have pickled onion then try out this caramelized onion chutney. It is very easy to make and can be left for months. caramelized onion chutney can be served with meat, pizza or any other relish.
Ingredients for Caramelized onion chutney:
500 gms. Onions
1 table-spoon olive oil
1/2 cup sugar
1 cup balsamic vinegar (Sirca)
2 table-spoon red wine vinegar
1 clove garlic, crushed (Lahsun)
1 t-spoon wholegrain Mustard (Rai ka dana)
a pinch of salt
1 red chilli, stem removed
How to make caramelized onion chutney:
- Peel the onions and slicely chop them.
- Take a large frying pan and heat oil in it. After 2 mins. turn the heat to low and add onions to it, Cook them on low heat such that onions should not get brown.
- After it gets nicely cooked and starts getting brown, add rest of the ingredients. Cook Onion chutney on low heat for next 15-20 mins or until they gets turned into thick and dark carmal colour Onion chutney. Then turn off the heat. Let caramelized onion chutney gets cool at room temperature.
- Now, shift onion chutney to the clean glass jar and leave it for 5-6 weeks to develop flavour.
