Baingan Bharta Recipe

Ingredients for Baingan Bharta:

1 kg Brinjal (Baingan/Bhata)
6-7 onions, chopped coarsely
3 table-spoon of grated dried coconut (nariyal) (optional)
1 whole garlic large, finely chopped (Lahsun)
2 t-spoon ginger (adrak)
2 t-spoon red chilli powder
2 green chillies, finely chopped
1 t-spoon turmeric powder (haldi)
salt to taste
2 medium sized tomatoes
2 table-spoon tamrind puri (Imli)
1 table-spoon garam masala powder
2 table-spoon oil
10-15 leaves coriander, finely chopped (dhaniya)


How to make Baingan bharta:

  • Roast Brinjal on heat until it turns soft. Keep rotating it, if roasting directly on a burner of gas. When it gets soft, insert brinjal in a bowl and add water to it. After 10 mins. peel off its burnt skin and mash it throughly
  • Now, take a non-stick frying pan, add oil to it and heat it, after 2 mins. add garlic, tomatoes, green chillies, onions, ginger in it and cook on medium heat for 5 mins. or until it gets golden brown, stirring continuously
  • Then, add mashed brinjal, turmeric, chilli powder, coconut powder, tamrind and garam masala, stir it well. Cook on low-medium heat, cover it with a lid, stirring occasionally. Heat bharta for 10 mins or until it gets properly cooked
  • Garnish Baingan Bharta with coriander leaves. Serve hot with rotis or chapatis.
