Ingredients for Beetroot halwa:
1/2 kg beetroot (chukandar)
750 ml. (3/4 liter) milk
250 gms sugar
1/4 t-spoon cardamom powder (elaichi)
10-12 saffron flakes
1/2 table-spoon ghee
2 t-spoon finely chopped dry fruits (cashews, raisins, almonds etc.)
How to make Beetroot Halwa:
- Peel and grate beetroot. Take a thick bottom saucepan and add milk and beetroot to it. Cook on medium-high heat, stir it occasionally till it starts getting thick. When it starts getting thick, add sugar heat further till it gets thick
- Now, add 1 t-spoon dry-fruits, cardamom, ghee, saffron and stir it continuously on low heat.
- Cook till ghee and milk disappears and Halwa gets collected in a soft ball
- Serve Beetroot halwa in glass bowls and garnish halwa with remaining dry-fruits.
