Cauliflower chutney is also known as fool gobhi / gobi chutney. Cauliflower chutney taste really different as compared to other chutneys in this category. Cauliflower is a very popular vegetable of India and available almost half an year.
Ingredients for Cauliflower chutney:
1 small Cauliflower (Fool Gobhi)
2 cloves garlic (Lahsun)
1 table-spoon fresh lime juice (Nimbu)
1 t-spoon Jeera,(Cumin)
1 t-spoon mustard seeds (raai)
1 t-spoon methi, powdered (fenugreek seeds powder)
1 t-spoon red chilli powder
1/2 table-spoon salt or to taste
2 table-spoon oil
How to make Cauliflower chutney:
- Cut Cauliflower into small pieces and keep them in salty water for 30 mins., then dry them on a plate.
- Now, mix methi powder, red chilli powder and salt together and add dried florets of Cauliflower to this mixture. Now grind these cauliflower florets along with the mixture to form the thick paste.
- Heat oil in a pan, after a minute add mustard seeds and jeera to it. When it starts splutter, add crushed garlic to it. Immediately add grinned Cauliflower paste and lime juice to the pan, turn the flame to low and cook further until the oil leaves the mixture and cauliflower gets properly cooked, then turn off the heat.
- Let the chutney gets cool at room temperature. Then transfer it to the glass bowl. Keep it in a fridge and give Cauliflower chutney one day to blend with the spices.
