Ingredients for South Indian Garam Masala :
2 table-spoon black peppercorns (kali mirch)
4 table-spoon Cumin Seeds (JeeraGram)
4 table-spoon Kasa Kasa (Poppy seeds)
2 black cardamom pods, husked
2 table-spoon Cloves (Lavangam / Krambu)
2 sticks of 1 inch each cinnamon (Pattai / dal chini)
2 table-spoon Annasi Poov (Star Anise)
1/2 whole nutmeg, grated
How to make South Indian Garam Marsala :
- Take a small pan and dry roast all the ingredients by mixing them for 3-4 mins, stirring continuously. Now turn off the heat and cool to room temperature.
- Dry Grind all the ingredients to a fine powder. South Indian (Andhra) Garam Masala is ready to use.
- Store it in a dry airtight jar.
