Ingredients for Kerala (Malayalam) Ulli Vada :

1 1/2 cups Bengal gram flour (Besan)
1/2 cup Rice flour
3-4 onions, thinly sliced
1 table-spoon ginger, minced (Adrak)
2-3 green chillies, chopped
a pinch of Asafoetida (hing)
8 to 10 curry leaves (kadhi patta)
Oil for frying
salt to taste

 

How to make Kerala Ulli Vada :

  • Combine all the ingredients in a large bowl and mix properly with hands. Add water in little quantity and keep mixing the batter. Make a desired consistent batter to fry Ulli Vada.
  • In a medium size pan heat oil to deep fry vada. Take a handful of vada batter and give it a round shape of vada. Deep fry wada in oil at medium heat till golden brown from both sides. Let it get crisp and brown
  • Serve Crispy Kerala Ulli vada with Coconut chutney or Sauce.
